One of the easier things to make when you are camping is soft tacos. They are delicious and the ingredients can be used for other meals.

 

We usually bring:
1 pack tortillas (which can be used for tacos or quesadillas)
1 pack ground beef
1 pack taco seasoning
1 pack shredded cheddar cheese (again, good for other dishes)
1 mini guacamole (we bring a few of these because they are easy to keep in the cooler)
salsa
Small sweet peppers

 

There are two tricks to making this over a single burner:

 

1- Make the ground beef with the seasoning first. You can use a paper towel to blot the grease from the meat and then use that later to help with starting the fire. Cover this pan when it is ready.

 

 

2- Then use a small skillet to warm the tortillas and put them on a plate with another over it to hold in the steam while you warm the rest of the tortillas.

 

 

Another trick is that instead of using lettuce (which is a PAIN to try to camp with) we like to bring those little sweet orange and yellow and red peppers. Dicing up one of these give your tacos some crunch AND some veggies.

 Delicious, filling camp tacos are ready in 20 minutes or less.

 

 

The skillet can just be wiped out when you are done, leaving just the one pan to wash!
